Chicken Enchilada Casserole
I make this often. I find the individual enchiladas a pain to roll and if you make a large dish of this, you can divide and freeze in containers for later.
I'm making this today!
Chicken Enchilada Casserole
Ingredients
4 chicken breasts cooked and shredded (cooked as you desire. I use, lime juice and taco seasoning in water and boil until cooked through). To shred chicken use 2 folks and pull chicken breasts apart or dice in very small cubes.
4 large tortillas Shredded cheese (combination of cheddar and monterey jack (approx 2 - 3 cups)
1 large can of black beans drained and rinsed well or 1 can of refried black beans (I've done both but I like the black beans better)
Fresh cilantro chopped
Fresh diced tomatoes
Black olives sliced (optional)
Green chile peppers diced
Sour cream
Enchilada sauce (buy it already made or make your own like I do)
To make your own.
I used 1 can of hunts original tomato sauce (680 ml size) - not pasta sauce
2 tbsp of ground cumin
1 tbsp of taco seasoning
1 tbsp of ground coriander
Simmer 5 min or until spices are blended with the sauce well
1. Preheat oven to 375 degrees F
2. Spray the bottom and sides (lightly) of the 9 X 13 inch baking dish.
3. Spoon enchilada sauce to bottom of the baking dish.
4. Cut 2 tortillas in half. Place the tortillas on the bottom of the baking dish where the straight cut edge meets in the middle. They can overlap in the middle and push up the sides a bit. If you use smaller tortillas then use as many as required to cover the layer.
5. Layer half of the black beans to the dish.
6. Next layer half of the shredded chicken.
7. Spoon half of the enchilada sauce onto the chicken pressing lightly with the tablespoon.
8. Sprinkle green diced green chile's and black olive slices on top.
9. Sprinkle half of the cheese covering the layer.
10. Repeat steps 4 -9 finishing with covering the top with cheese.
11. Sprinkle diced tomatoes and freshly chopped cilantro on top.
12. Cover with aluminum foil and bake for 30 min or until it's nice and bubbly.
13. Remove foil cover and continue to bake for another 5 min or so.
14. Let casserole rest for 10 minutes before serving.
15. Serve with a doll-up of sour cream. You can also add guacamole or salsa as side toppings as you wish.
Serve with a side salad, and enjoy!

Well Saint it was another hit. I've made this quite a few times and this time I shouldn't have put it on the bottom rack...uh..A little too well done. I can just take that off and I don't really need the carbs anyway. Otherwise, I was thinking of you the whole time I was enjoying it.

I am going to make this one this weekend! The family loves Chicken enchiladas but I don't much for the recipe someone else gave me. THanks for posting.

Yep nothing easier than an lasagna type of casserole.
I was talking with a friend and she suggested the enchilada sauce could be spiced up. So you could add red dried chili peppers to make it a bit hotter and spicy.
Feel free to experiment and Ponee, let me know how yours turns out. Any shredded chicken will work to. Doesn't only have to be chicken breasts.

Today is the day !!!! I am making them! I like the idea of the lime juice and taco seasoning in the water for boiling the chicken ! I never thought of that ! Goldie Girl, what is that other picture of? It looks really good!

I did and it was delicious !! Thanks so much for the recipe ! I made half a batch, just in case the family didn't like it, but next time I will make the full casserole.
